Ingredients

  • 5 oz salmon fillet
  • 3/4 cup cooked quinoa
  • 1 cup broccoli florets
  • 1 tbsp olive oil
  • 1 whole lemon
  • 2 tbsp fresh dill
  • 1/2 tsp salt
  • 1/4 tsp pepper

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Place the salmon fillet on the prepared baking sheet. Drizzle half of the olive oil over the salmon, and season with salt and pepper. Squeeze the juice of half a lemon over the salmon.

In a bowl, toss the broccoli florets with the remaining olive oil, a pinch of salt, and pepper. Arrange the broccoli around the salmon on the baking sheet.

Bake in the preheated oven for about 12-15 minutes, until the salmon is cooked through and flakes easily with a fork, and the broccoli is tender.

While the salmon and broccoli are baking, prepare the quinoa. In a saucepan, combine the cooked quinoa with 1 tablespoon of fresh dill, the juice of the remaining lemon half, and a pinch of salt and pepper. Stir gently over low heat until warmed through.

Once cooked, remove the salmon and broccoli from the oven. Plate the salmon fillet, a serving of lemon-dill quinoa, and roasted broccoli.

Garnish with additional fresh dill if desired. Serve warm.
