Ingredients

  • 150 g Salmon fillet
  • 3/4 cup Cooked quinoa
  • 1 cup Broccoli florets
  • 1 tsp Olive oil
  • 1 piece Lemon wedge
  • 1 clove Garlic
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Instructions

Heat 1 tsp of olive oil in a non-stick skillet over medium-high heat.

Season the salmon fillet with salt and pepper on both sides.

Place the salmon fillet in the skillet, skin side down, and cook for about 4-5 minutes without moving it to get a crispy skin.

Flip the salmon and cook for another 3-4 minutes, or until the salmon is cooked to your preference. Remove from skillet and set aside.

While the salmon is cooking, bring a pot of water to boil, then add a pinch of salt and the broccoli florets. Steam for about 5-7 minutes or until tender.

Crush one clove of garlic and add it to the hot skillet, cooking until fragrant.

Add the cooked quinoa to the skillet with the garlic, stirring to combine and heat through for about 2-3 minutes.

Serve the salmon over a bed of garlic quinoa, along with steamed broccoli on the side. Squeeze a lemon wedge over the salmon and enjoy.
