Ingredients

  • 4 large potatoes
  • 1/4 cup milk
  • 2 large eggs
  • 1/2 cup flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • for frying about 1/4 cup vegetable oil
  • 2 tbsp butter
  • optional serving sour cream or applesauce for serving

Instructions

Peel the potatoes and grate them using the large holes of a box grater. Place the grated potatoes into a clean kitchen towel and wring out as much liquid as possible.

In a large mixing bowl, beat the eggs and then add the milk, flour, salt, and black pepper. Stir to combine.

Add the grated potatoes to the egg mixture and stir until well combined.

Heat a large frying pan over medium heat and add enough vegetable oil to cover the bottom of the pan lightly.

Once the oil is hot, drop spoonfuls of the potato mixture into the pan and flatten them slightly with the back of the spoon to form pancakes.

Cook the pancakes for 3-4 minutes on each side, or until golden brown and crispy. Make sure they are cooked through and no longer raw in the middle.

Drain the cooked pancakes on a plate lined with paper towels and keep them warm in a low oven if necessary while continuing to cook the remaining pancakes.

Serve the potato pancakes hot with a dollop of sour cream or applesauce on top.
