Ingredients

  • 500 grams potato
  • 100 grams flour
  • 150 grams cheese
  • 1 large egg
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 tablespoons vegetable oil

Instructions

Peel and grate the potatoes using a box grater and place them in a bowl of cold water to remove excess starch. Rinse twice, then drain thoroughly and squeeze out excess water using a kitchen towel.

Grate the cheese and set aside. A semi-hard cheese like cheddar or mozzarella works well.

In a large mixing bowl, combine the grated potatoes, grated cheese, flour, egg, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.

Heat the vegetable oil in a large non-stick skillet over medium heat.

Scoop about 3 tablespoons of the potato mixture and form into a small pancake using your hands. Carefully place in the hot oil. Repeat until the skillet is filled with pancakes, but do not overcrowd.

Cook the pancakes for about 3-4 minutes on each side, or until they are golden brown and crispy. Adjust the heat as necessary to avoid burning.

Remove the pancakes from the skillet and place them on a plate lined with paper towels to drain any excess oil.

Repeat the cooking process with the remaining potato mixture, adding more oil to the skillet if necessary.

Serve the potato pancakes hot with a dollop of sour cream or applesauce, if desired.
