Begin by preparing your ingredients: mince the garlic cloves and grate the ginger piece. Chop the chicken breast into bite-sized pieces.
In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
Add the chicken pieces to the skillet. Season with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
Remove the cooked chicken from the skillet and set aside. In the same pan, add another tablespoon of olive oil.
Add the mixed stir-fry vegetables to the skillet. Stir-fry for about 5-7 minutes, until the vegetables are tender-crisp.
Return the cooked chicken to the skillet with the vegetables. Add the soy sauce and sesame oil. Stir well to combine everything. Cook for an additional 2-3 minutes to allow the flavors to meld together.
Meanwhile, if the brown rice is not freshly cooked, warm it up in the microwave or on the stove.
Serve the chicken and vegetable stir-fry over the brown rice, dividing evenly among plates. Enjoy your delicious and healthy meal!
