Preheat your oven to 400°F (200°C).
Season the chicken thigh with salt, pepper, rosemary, and thyme. Rub the seasoning well into the meat and under the skin.
Place the seasoned chicken thigh on a baking tray and drizzle with half of the olive oil. Roast in the oven for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
While the chicken is roasting, peel and chop the sweet potato into small chunks.
Boil the sweet potato chunks in a pot of salted water for about 15-20 minutes, or until fork-tender.
Drain the sweet potatoes and return them to the pot. Add the butter and milk, then mash until smooth and creamy. Season with salt and pepper to taste.
Heat the remaining olive oil in a skillet over medium heat and sauté the steamed green beans for 3-4 minutes until heated through and slightly blistered. Season with salt and pepper.
Serve the roasted chicken thigh alongside the sweet potato mash and green beans. Garnish with extra rosemary or thyme if desired.
