Ingredients

  • 4 oz mixed seafood (shrimp, mussels)
  • 1 cup short-grain rice or paella rice
  • 1/2 cup peas
  • 1/2 cup diced tomatoes
  • 1 tbsp olive oil
  • 2 cups water or fish stock

Instructions

Heat the olive oil in a large pan over medium heat.

Add the mixed seafood and cook for 2-3 minutes until the shrimp turns pink and the mussels open up. Remove and set aside.

In the same pan, add the rice and a pinch of saffron or turmeric, stirring to coat the rice in the oil for 1 minute.

Add the diced tomatoes and continue to stir for another minute.

Pour in the water or fish stock and bring to a simmer over medium heat.

Add the peas, then season with salt and pepper to taste. Stir gently to combine.

Reduce the heat to low, cover the pan, and allow the mixture to cook for about 20 minutes, or until the rice is tender and most of the liquid is absorbed.

Add the cooked seafood back into the pan, cover again, and cook for another 5 minutes to heat through.

Remove from heat and let sit for a few minutes before serving. Fluff the rice gently with a fork before serving.
