Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
Cook pasta according to the package instructions, then drain and set aside.
In a large skillet, heat olive oil over medium heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
Add heavy cream to the skillet and bring to a simmer. Cook for 2-3 minutes until slightly thickened.
Stir in the Parmesan cheese, and continue stirring until the cheese melts and the sauce is smooth.
Return the chicken to the skillet and add the cooked pasta. Toss everything together until well coated with the sauce.
Garnish with chopped parsley and serve hot.
