Banana–Oat Pancakes with Warm Berry Compote & Maple Syrup

By Josiah John

Total: 30 minutes
BreakfastVegetarianEgg-freeDessert

Ingredients

  • 60 g Rolled oats (blended into flour)
  • 1 medium Ripe banana
  • 120 ml Milk (dairy or plant)
  • 1 tsp Baking powder
  • 1/8 tsp Salt
  • 1/2 tsp Vanilla extract
  • 1 tsp Olive oil
  • 100 g Mixed berries
  • 1 tbsp Sugar
  • 1 tbsp Maple syrup

Instructions

1

In a medium bowl, mash the ripe banana until smooth. Add the oat flour, milk, baking powder, salt, and vanilla extract. Stir until combined into a smooth batter. Let the batter sit for 5 minutes to thicken slightly.

2

While the batter rests, prepare the berry compote. In a small saucepan, combine the mixed berries and sugar. Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens, about 5-7 minutes. Remove from heat and set aside.

3

Heat a non-stick frying pan over medium heat and add 1 tsp of olive oil. Once the pan is hot, pour 1/4 cup portions of the pancake batter into the pan. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown. Repeat with the remaining batter, adding more oil if necessary.

4

Serve the pancakes warm, topped with the berry compote and drizzled with maple syrup. Enjoy your egg-free banana-oat pancakes with warm berry compote and maple syrup!
