In a medium bowl, mash the ripe banana until smooth. Add the oat flour, milk, baking powder, salt, and vanilla extract. Stir until combined into a smooth batter. Let the batter sit for 5 minutes to thicken slightly.
While the batter rests, prepare the berry compote. In a small saucepan, combine the mixed berries and sugar. Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens, about 5-7 minutes. Remove from heat and set aside.
Heat a non-stick frying pan over medium heat and add 1 tsp of olive oil. Once the pan is hot, pour 1/4 cup portions of the pancake batter into the pan. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown. Repeat with the remaining batter, adding more oil if necessary.
