In a blender or with a fork, blend or mash the ripe banana until smooth.
In a mixing bowl, combine the oat flour, baking powder, and salt. Stir until well combined.
Add the blended banana, milk, and vanilla extract to the dry ingredients. Mix until you have a smooth batter. Let it rest for about 5 minutes.
While the batter is resting, prepare the berry compote. In a small saucepan over medium heat, combine the mixed berries and sugar. Stir occasionally until the berries have softened and the mixture has thickened slightly, about 5-7 minutes. Remove from heat.
Heat olive oil in a non-stick skillet over medium heat.
Pour about 2 tablespoons of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2-3 minutes, or until golden brown. Repeat until all batter is used.
Serve pancakes warm, topped with the warm berry compote and drizzled with maple syrup.
