Thick wedges of cabbage are seared until caramelized, finished with nutty brown butter, bright lemon, and crunchy garlic breadcrumbs for a dish that’s at once rustic and refined. The contrast of sweet caramelized edges, silky inner leaves, toasted crumbs and a pop of acidity makes this a remarkable vegetarian main or show-stopping side.
Prepare the cabbage: remove any ragged outer leaves, then cut the cabbage into 4 even wedges through the core so each wedge holds together. Leave the core intact (it keeps the wedges together while searing). Cutting into steaks/wedges ensures large surface area for caramelization, which builds deep, sweet flavors.
Pat the wedges dry with paper towels and season both sides with 1 tsp kosher salt and a few grinds of black pepper. Removing surface moisture helps the cabbage brown rather than steam in the pan.
Make the garlic breadcrumbs: warm 1 tbsp olive oil in a small skillet over medium heat. Add finely minced garlic (from 2 cloves) and the breadcrumbs. Toast, stirring, until golden and crisp (about 4–5 minutes). Season with a pinch of salt and the smoked paprika.
