Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is coated evenly. Marinate for at least 15 minutes, or up to an hour in the refrigerator for more flavor.

Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
In the meantime, heat a grill or grill pan over medium-high heat. Once hot, add the marinated chicken breasts and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
While the chicken is grilling, sauté the mixed vegetables in a separate pan with a little olive oil over medium heat for about 5-7 minutes until tender. Season with salt and pepper to taste.
Once the chicken is cooked and the quinoa is ready, serve the quinoa on plates topped with the grilled chicken and sautéed mixed vegetables. Enjoy your meal!
