Preheat a grill pan over medium-high heat and brush it lightly with olive oil.
Season the large shrimp with a pinch of salt and black pepper.
Grill the shrimp for about 2-3 minutes on each side until they are pink and cooked through. Remove from the grill and set aside.
While the shrimp is grilling, wash and chop the Romaine lettuce into bite-sized pieces.
In a large mixing bowl, combine the chopped romaine lettuce, croutons, and Parmesan shavings.
Add the yogurt-based Caesar dressing to the salad and toss until well coated.
Arrange the tossed salad on plates and top with the grilled shrimp.
Finish with additional black pepper to taste. Serve immediately.
