Ingredients

  • 3 pieces large eggs (or 2 eggs + 2 egg whites)
  • 50 g mushrooms
  • 30 g baby spinach
  • 50 g cherry tomatoes
  • 1 tsp olive oil
  • 1 slice whole-grain bread

Instructions

Crack the eggs into a bowl. If using egg whites, separate the yolks from two eggs. Whisk until well combined and season with a pinch of salt and pepper.

Slice the mushrooms and cherry tomatoes thinly.

Heat olive oil in a non-stick skillet over medium heat.

Add sliced mushrooms to the skillet and sauté for about 3 minutes or until they start to soften.

Add cherry tomatoes and sauté for another 2 minutes. Then add the baby spinach and cook until just wilted.

Lower the heat to medium-low. Pour the egg mixture over the sautéed vegetables evenly. Cook for about 5 minutes, or until the edges are set and the middle is slightly wobbly.

Carefully fold the omelette in half and cook for another 1-2 minutes until the center is fully set.

While the omelette is cooking, toast the whole-grain bread until golden brown.

Serve the omelette with the toast on the side. Season with additional salt and pepper, if desired.
