Ingredients

  • 4 slices whole grain bread
  • 1 cup fresh ricotta
  • 2 tablespoons honey
  • 8 pieces fresh or dried figs
  • 1/4 cup sliced almonds
  • 1 teaspoon lemon zest

Instructions

Preheat your oven to 350°F (175°C).

Place the sliced almonds on a baking sheet and toast them in the preheated oven for 5-7 minutes, or until they are golden brown. Keep a watchful eye to prevent them from burning.

Meanwhile, toast the whole grain bread slices in a toaster until they are golden brown and crispy.

In a small bowl, mix the fresh ricotta with 1 tablespoon of honey and the lemon zest until well combined.

Spread the ricotta mixture generously over each toasted slice of bread.

Slice the figs into quarters if using fresh figs; or, if using dried figs, chop them into smaller pieces. Arrange the figs evenly on top of the ricotta spread on each slice of toast.

Drizzle the remaining 1 tablespoon of honey over the figs on each slice.

Sprinkle the toasted almonds evenly over the top of each fig-topped toast.
