Bring a large pot of salted water to a boil. Add the gluten-free pasta and cook according to package instructions until al dente.
While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.
Chop the onion, carrot, and mince the garlic cloves. Add them to the skillet and sauté for about 5 minutes, or until the onions are translucent.
Add the lean ground turkey to the skillet. Cook until browned, breaking it apart with a spatula, about 7-8 minutes.
Stir in the tomato sauce and Italian herbs. Reduce the heat to low and let the sauce simmer for 10-15 minutes, stirring occasionally. Add salt and pepper to taste.
Drain the cooked pasta and add it to the sauce. Toss to combine and let it heat through for an additional 2-3 minutes.
Divide the pasta and sauce among serving plates. Sprinkle 2 tablespoons of grated Parmesan over each serving.
In a large bowl, toss the mixed greens with the light vinaigrette until well coated.
Serve the pasta hot, accompanied by the fresh side salad.
