Cook the whole wheat pasta according to package instructions in a large pot of boiling salted water. Once cooked, drain and set aside.
While the pasta is cooking, cut the chicken breasts into bite-sized pieces and season with salt and pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil. Add chopped garlic and sliced red onion. Sauté for about 2 minutes until fragrant and the onion begins to soften.
Add the cherry tomatoes and cook for 3-4 minutes, allowing them to soften. Season with oregano, basil, salt, and pepper.
Add the kalamata olives to the skillet and stir well. Cook for an additional 2 minutes.
Return the cooked chicken to the skillet. Add the pasta and spinach, and gently toss everything together to combine.
Sprinkle the crumbled feta cheese and drizzle with lemon juice. Adjust seasoning if necessary.
Serve the Mediterranean Chicken Pasta warm, with extra feta cheese and olives if desired.
