In a small bowl, juice the lemon and combine the juice with the olive oil, minced garlic, dried oregano, dried thyme, salt, and black pepper to create a marinade.
Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over them. Ensure the chicken is well coated. Let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
Preheat an outdoor grill or a grill pan over medium-high heat.
Remove the chicken from the marinade and place it on the hot grill. Cook each side for about 6-7 minutes, or until the chicken is thoroughly cooked and has grill marks.
Remove the chicken from the grill and let it rest for 5 minutes before serving to allow the juices to redistribute.
