Rinse the quinoa under cold water using a mesh strainer until the water runs clear to remove bitterness.
In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil over medium heat.
Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes or until all the water is absorbed and the quinoa is cooked.
While the quinoa is cooking, chop the cherry tomatoes in halves, dice the cucumber, and finely chop the red onion.
In a large mixing bowl, combine the cooked quinoa (let it cool slightly), chopped tomatoes, diced cucumber, red onion, kalamata olives, crumbled feta cheese, chopped parsley, and dried oregano.
In a small bowl, whisk together the extra virgin olive oil, lemon juice, salt, and black pepper to make the dressing.
Pour the dressing over the quinoa mixture and gently toss everything together until well combined.
Serve the Mediterranean quinoa bowl either as a main dish or a side, and enjoy!
