Classic Banana Pudding

Ingredients

  • 3 whole ripe bananas
  • 2 cups whole milk
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/8 tsp salt
  • 1 tsp vanilla extract
  • 3 whole egg yolks
  • 2 tbsp butter
  • 1 cup vanilla wafers

Instructions

In a medium saucepan, combine 2 cups of whole milk, 3/4 cup granulated sugar, 1/4 cup cornstarch, and 1/8 teaspoon salt. Whisk until well combined and smooth.

Place the saucepan over medium heat and cook the mixture, whisking constantly, until it begins to bubble and thicken, about 5-7 minutes.

In a separate bowl, lightly beat 3 egg yolks. Slowly add a small amount of the hot milk mixture to the yolks while continuously whisking (this is called tempering).

Once the egg yolks are tempered, slowly whisk them back into the saucepan with the remaining milk mixture. Continue to cook for another 2-3 minutes, until the pudding is thick and creamy.

Remove the saucepan from heat, and stir in 2 tablespoons of butter and 1 teaspoon of vanilla extract until fully melted and combined.

Slice 3 ripe bananas into thin coins.

In a serving dish, layer vanilla wafers, banana slices, and a portion of the warm pudding. Repeat the layers until you've used all ingredients, finishing with a layer of pudding on top.

Let the banana pudding cool to room temperature, then cover with plastic wrap and refrigerate for at least 1 hour before serving.
