Preheat your oven to 375°F (190°C).
Lightly oil a muffin tin with a bit of olive oil to prevent sticking.
Place a slice of smoked salmon in each of four muffin cups, so it lines the cup and comes up slightly over the edges.
Crack one egg into each of the salmon-lined cups. Season the eggs with salt and pepper to taste.
Bake in the preheated oven for 12-15 minutes until the egg whites are set but the yolks are still slightly runny.
While the eggs are baking, mix the cherry tomatoes with 1 tsp of za'atar and 1 tbsp of olive oil in a bowl. Add salt and pepper to taste. Set aside.
Once the eggs are cooked, remove them from the oven and let them cool slightly before removing them from the muffin tin.
Carefully remove the egg cups from the tin and place them on a serving plate.
Top each egg cup with slices of avocado and a little fresh dill or parsley as garnish.
Serve the egg cups with the za'atar-spiced cherry tomatoes on the side.
