Bright, silky avocado spread layered with smoky, melt-in-your-mouth salmon atop a crisp, nutty whole-grain slice — finished with zesty lemon, juicy cherry tomatoes and a drizzle of olive oil. This toast balances creamy, briny and acidic flavors with a variety of textures for an elevated, restaurant-quality brunch that’s ready in minutes.
Prep the produce. Halve the cherry tomatoes and set aside. Zest the lemon first (it’s easier to zest before juicing) and then squeeze 1 tablespoon of juice into a small bowl — the zest provides aroma while the juice brightens the overall flavor.
