Ingredients

  • 5 oz roasted pork tenderloin
  • 1 cup garlic mashed potatoes
  • 1 cup sautéed spinach with garlic and olive oil
  • 2 sprigs fresh rosemary or thyme
  • 1 tbsp olive oil

Instructions

Preheat your oven to 400°F (200°C).

Lightly sprinkle the roasted pork tenderloin with salt, black pepper, and if using, mince a sprig of rosemary or thyme and gently rub onto the meat.

Place the seasoned pork tenderloin in a baking dish and drizzle with 1 tbsp of olive oil. Place another sprig of rosemary or thyme on top of the pork for added flavor.

Bake the pork tenderloin in the preheated oven for about 20 minutes, or until it is heated through. If using a meat thermometer, check until the internal temperature reaches 145°F (63°C).

While the pork is in the oven, reheat 1 cup of garlic mashed potatoes in a saucepan over medium heat. Stir occasionally to prevent sticking.

In a separate pan, reheat 1 cup of sautéed spinach with garlic and olive oil over a low flame.

Once everything is heated through, remove the pork tenderloin from the oven and let it rest for 5 minutes before slicing.

Serve the sliced pork tenderloin with a scoop of garlic mashed potatoes and sautéed spinach on the side. Garnish with additional fresh herbs if desired.
