Heat a non-stick skillet over medium heat and add 1 teaspoon of oil.
Add 1 cup of spinach to the skillet and sauté for about 2-3 minutes until wilted. Season with salt and pepper to taste. Remove from the skillet and set aside.
In the same skillet, crack 1 egg and cook it to your desired doneness (sunny side up, over easy, etc.). Season with a pinch of salt and pepper while cooking.
While the egg is cooking, toast the whole grain English muffin in a toaster or on a grill until golden brown.
Once the egg is done, place the cheesy slice on top of the egg and cover the skillet with a lid for about 1 minute until the cheese melts.
Spread the sautéed spinach on the bottom half of the toasted English muffin, then layer the cheesy egg on top of the spinach.
Top with the other half of the English muffin and serve immediately.
