Drain the tofu and pat it dry with paper towels. Cut the tofu into bite-sized cubes.
Heat 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat.
Add the tofu cubes to the skillet, cooking until golden brown on all sides, about 5-7 minutes. Remove the tofu and set aside.
In the same skillet, add the remaining 1 tablespoon of olive oil. Add the mixed vegetables and stir-fry for 3-4 minutes until they are tender-crisp.
Return the tofu to the skillet with the vegetables. Pour in the soy-ginger sauce, and gently toss everything together to coat evenly.
Season with salt and black pepper to taste. Stir-fry for an additional 1-2 minutes until everything is heated through.
Serve the tofu stir-fry over the cooked brown rice. Enjoy your meal!
