Ingredients

  • 2 cups Broccoli
  • 1 large Red Bell Pepper
  • 1 large Carrot
  • 1 cup Sugar Snap Peas
  • 2 tablespoons Soy Sauce
  • 2 cloves Garlic
  • 1 inch piece Ginger
  • 2 tablespoons Vegetable Oil
  • 1 tablespoon Sesame Seeds

Instructions

Wash and cut the broccoli into small florets. Slice the red bell pepper, peel and slice the carrot into thin rounds. Trim the sugar snap peas and set all vegetables aside.

Mince the garlic and grate the ginger. Mix the soy sauce, garlic, and ginger in a small bowl and set aside.

Heat the vegetable oil in a large pan or wok over medium-high heat. Add the carrot slices and stir-fry for 3 minutes.

Add the broccoli florets and sugar snap peas to the pan. Stir-fry for an additional 3 minutes until the vegetables are tender-crisp.

Add the red bell pepper slices and the soy sauce mixture to the pan. Stir well to combine the ingredients and coat the vegetables evenly. Stir-fry for another 2-3 minutes.

Sprinkle the sesame seeds over the stir-fried vegetables. Serve hot, optionally over cooked rice or noodles.
