Drain the sardines from the can, reserving the olive oil. Set the sardines aside on a plate.
In a medium bowl, combine the diced tomato, cucumber, chopped parsley, salt, and black pepper.
Squeeze the juice of half a lemon into the bowl, taking care to remove any seeds.
Add 1 tablespoon of olive oil and the reserved olive oil from the sardine can to the bowl. Mix the ingredients gently but thoroughly.
Arrange the salad mixture on a serving plate or individual plates.
Place the sardines on top of the salad, adjusting the presentation as desired.
Drizzle an additional tablespoon of olive oil over the sardines and salad.
Serve immediately as a fresh appetizer or light meal.
