A bright, creamy breakfast porridge that pairs nutty quinoa with silky almond milk and a zing of fresh orange. Topped with crunchy toasted pistachios and coconut flakes plus a cooling dollop of coconut yogurt, it’s a springtime bowl that balances creaminess, citrus brightness and satisfying crunch—restaurant-quality, made simply at home.
Rinse the quinoa thoroughly in a fine-mesh sieve under cold running water for 30–60 seconds. Rinsing removes the natural saponins on the grains that can taste bitter and also prevents excessive foaming during cooking.
Dry-toast the rinsed quinoa (optional but recommended for depth of flavor): place a medium saucepan over medium heat, add the drained quinoa and toast, stirring, for 2–3 minutes until you smell a nutty aroma and some grains begin to pop. Toasting drives off moisture and amplifies the quinoa’s intrinsic nuttiness.
Add the water, almond milk and 1/4 tsp salt to the saucepan with the toasted quinoa.
