Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with a bit of olive oil.
In a frying pan, cook the bacon slices over medium heat until crispy. Once cooked, remove them from the pan and set them on a paper towel to drain.
In a mixing bowl, beat the eggs and then stir in the chopped spinach, cheese, salt, and pepper.
Crumble the cooled bacon slices and add them to the egg mixture, stirring well to combine.
Pour the egg mixture evenly into the muffin tin compartments, filling each about 3/4 full.
Bake in the preheated oven for 15-18 minutes, or until the egg muffins are firm to the touch and lightly golden on top.
Allow the muffins to cool slightly before gently removing them from the tin with a spatula. Serve warm.
