In a medium saucepan, bring 250ml of water and 250ml of milk (or a mix of milk and water) to a gentle boil over medium heat. Add 1 teaspoon of salt.
Slowly whisk in the 100g of coarse cornmeal (polenta), stirring constantly to prevent lumps from forming. Lower the heat to a simmer and continue to cook, stirring often, until the mixture thickens and becomes creamy, about 20-25 minutes.
While the polenta is cooking, peel, core, and slice the pears into thin wedges.
In a separate pan, melt 1 tablespoon of butter over medium heat. Add the pear slices and cook until they begin to soften, about 5 minutes. Stir in the 1 tablespoon of honey and the pinch of cinnamon, cooking for another 3-5 minutes until the pears are tender and caramelized.
Once the polenta has thickened, stir in 1 tablespoon of butter for extra creaminess. Adjust seasoning with salt if necessary.
Serve the creamy polenta in bowls, topped with the poached pears and a drizzle of the pan juices. Optionally, garnish with an additional drizzle of honey or a sprinkle of cinnamon.
