Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons butter

Instructions

In a large mixing bowl, whisk together 1 cup of all-purpose flour, 1 tablespoon of sugar, and 2 teaspoons of baking powder until well combined.

In another bowl, beat 1 large egg and then add 1 cup of milk. Mix until the egg is fully incorporated into the milk.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are okay.

Preheat a non-stick skillet or griddle over medium heat. Once hot, add a small amount of butter to the pan, about 1/2 tablespoon, and let it melt.

Using a ladle or 1/4 cup measuring cup, pour batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes.

Carefully flip the pancakes and cook for an additional 1-2 minutes on the other side, until golden brown.

Remove pancakes from the skillet and keep warm. Repeat with remaining batter, adding more butter as needed. Serve hot with your choice of toppings such as maple syrup, fresh fruit, or whipped cream.
