In a large mixing bowl, combine the buckwheat flour, baking powder, and salt. Mix well.
Add the plant-based milk and vanilla extract to the dry ingredients, stirring until the batter is smooth and has no lumps. Let it sit for a few minutes.
Preheat a non-stick skillet or griddle over medium heat and lightly coat with 1 tablespoon of coconut oil.
Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2 minutes until golden brown. Repeat with the remaining batter, adding more coconut oil as needed.
While pancakes are cooking, heat the mixed berries and maple syrup in a small saucepan over medium heat. Cook until the berries begin to break down and the compote thickens, about 5-7 minutes. Stir occasionally.
To serve, stack a few pancakes on a plate, spoon the berry compote over them, and drizzle with almond butter. Serve immediately.
