Cook the pasta according to package instructions in a pot of boiling salted water. When done, drain and set aside.
Mince the garlic and finely chop the onion.
In a large pan, heat the oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
Add the minced garlic to the pan and cook for another 1-2 minutes until fragrant.
Add the butter to the pan and let it melt. Stir in the flour and cook for 1-2 minutes, mixing well to form a roux.
Gradually whisk in the milk, stirring constantly to avoid lumps, until the sauce starts to thicken.
Add the cheese to the sauce, stirring until melted and smooth. Season with salt, pepper, and sugar. Stir well to combine.
Add the cooked pasta to the cheese sauce, tossing to coat the noodles evenly.
Serve hot, optionally garnished with more cheese or chopped herbs like parsley.
