Ingredients

  • 200 g spaghetti
  • 300 g Italian sausage
  • 400 g tomatoes
  • 100 g carrots
  • 1 medium onion
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp basil

Instructions

Bring a large pot of salted water to a boil. Once boiling, add the spaghetti and cook according to package instructions until al dente. Drain and set aside.

While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 2-3 minutes until it becomes translucent.

Add the minced garlic to the skillet and sauté for another minute until fragrant.

Remove the casing from the Italian sausage and crumble it into the skillet. Cook until browned and cooked through, about 5-7 minutes.

Chop the tomatoes and carrots. Add them to the skillet with the sausage. Stir well to combine.

Season the sauce with salt, black pepper, and basil. Let it simmer for about 10 minutes until the tomatoes break down and the sauce thickens slightly.

Once the sauce is thickened, add the cooked spaghetti to the skillet. Toss everything together until the spaghetti is well coated with the sauce.

Serve hot, garnishing with extra basil if desired.
