A bright, silky bowl that balances creamy unsweetened coconut yogurt with the fresh sweetness of banana and mixed berries, crunchy toasted walnuts and chia for a satisfying texture contrast. Cinnamon and a light honey drizzle (optional) lift the flavors into a chef’s-breakfast worthy harmony — rich, tart, nutty and naturally sweet, all paleo-friendly.
Prepare the fruit. Slice the banana into 1/4-inch rounds and place in a small bowl; toss with 1/2 tsp fresh lemon juice if using. (Why: lemon stops enzymatic browning so the banana looks fresh, and a little acidity brightens the bowl’s overall flavor.) Set aside.
Lightly macerate the berries. If your berries are firm, sprinkle them with the pinch of sea salt and gently press a few times with the back of a spoon — this releases a little juice and concentrates flavor without making them mushy. (Why: maceration concentrates berry sweetness and creates a subtle sauce that mingles with the coconut yogurt.)
Toast the walnuts. Heat a small dry skillet over medium heat, add the chopped walnuts and toast, stirring frequently, 2–3 minutes until fragrant and a shade darker. Optionally add 1/2 tsp oil and a tiny pinch of salt for a shinier, more toasted finish. Remove from heat and transfer to a plate to stop them from continuing to cook. (Why: toasting deepens the walnuts’ flavor and adds crunch; removing them from the hot pan prevents burning and bitterness.)
Warm the coconut yogurt slightly (optional). If you prefer an open, aromatic bowl, let the coconut yogurt sit at room temperature for 5 minutes or microwave briefly (6–8 seconds) to take the chill off. Stir in the ground cinnamon. (Why: slightly warming the yogurt helps release the coconut aroma and allows the cinnamon to bloom into the yogurt.)
Layer the bowl. Spoon the coconut yogurt into a shallow bowl and spread gently to form a base. Arrange the sliced banana on one side, spoon the macerated berries on another, and scatter toasted walnuts across the top. Sprinkle the chia seeds evenly and finish with an extra pinch of cinnamon and the optional 1 tsp honey or maple syrup if you want more sweetness. (Why: arranging components preserves textures — creamy, soft fruit and crunchy nuts — and makes the bowl visually inviting.)
Final toss (optional) and serve immediately. If you prefer each spoonful mixed, fold gently to combine so chia and walnut bits distribute evenly. (Why: chia seeds will absorb some moisture if left too long, thickening the yogurt — mix now for even texture, or wait for a softer pudding-like consistency.)
