Peel and dice the potatoes into small cubes. Boil them in salted water for about 10 minutes or until just tender. Drain and set aside.
Dice the pork into small pieces. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the pork and cook until browned and cooked through, about 6-8 minutes. Remove from the skillet and set aside.
In the same skillet, add another tablespoon of olive oil and the boiled potatoes. Cook until they begin to brown slightly, about 5 minutes.
Beat the eggs in a bowl, then mix in the flour and milk until smooth. Add salt and pepper to the egg mixture.
Add the cooked pork back to the skillet with the potatoes. Pour the egg mixture over the top. Reduce the heat to low and allow the eggs to cook and set, stirring occasionally, for about 5-7 minutes.
Sprinkle grated cheddar cheese over the skillet. Cover and let the cheese melt, about 2 minutes.
Serve hot and enjoy your cheesy potato and pork breakfast skillet!
