Preheat your grill or grill pan to medium-high heat.
In a bowl, mix the olive oil, Italian herbs, salt, and pepper to create a marinade.
Brush the chicken breasts with half of the marinade. Set aside for 5 minutes to absorb the flavors.
In another bowl, toss the mixed vegetables with the remaining marinade.
Place the chicken breasts on the grill. Cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
Meanwhile, in a separate pan or grill basket, cook the vegetables for about 10-15 minutes or until they are tender and slightly charred.
Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.
Serve the grilled chicken breasts alongside the roasted vegetables. Add additional salt and pepper to taste, if needed.
