Start by preparing the avocado. Cut the avocado in half, remove the pit, and scoop out the flesh from one half. Mash it in a bowl with a fork until smooth. Add a pinch of salt and pepper to taste.
Lay the whole-grain tortilla flat on a clean surface. Spread 1 tablespoon of light mayo evenly over the surface of the tortilla.
Layer the sliced turkey breast over the mayo-covered tortilla, ensuring even distribution across the tortilla.
Spread the mashed avocado over the turkey slices, making sure it covers them evenly.
Add tomato slices and lettuce leaves on top of the avocado layer. Arrange them so they are evenly distributed.
Carefully roll the tortilla tightly, starting from one end, to create the wrap. Slice the wrap in half for easier serving.
Prepare the side salad by placing the mixed greens in a bowl. In a small jar or bowl, mix 1 tablespoon of olive oil with 1 teaspoon of vinegar, a pinch of salt, and pepper. Drizzle the vinaigrette over the mixed greens and toss to combine evenly.
