Ingredients

  • 600 g ground or sliced turkey breast
  • 2 pieces avocados
  • 1 head romaine or butter lettuce
  • 2 pieces tomatoes
  • 1 cup corn kernels
  • 1 piece lime
  • 1 tbsp olive oil
  • 1/4 cup cilantro
  • to taste n/a salt
  • to taste n/a pepper

Instructions

Heat olive oil in a large skillet over medium-high heat. Add the ground or sliced turkey breast and cook for 8-10 minutes, stirring occasionally, until it is browned and cooked through. Season with salt and pepper. Remove from heat and set aside.

While the turkey is cooking, prepare the tomato-corn salad. Dice the tomatoes and place them in a bowl. Add the corn kernels. If using frozen corn, make sure it is thawed.

Chop the cilantro finely and add to the bowl with the tomatoes and corn.

Squeeze the juice of one lime over the tomato-corn mixture. Season with salt and pepper to taste. Mix well and set aside.

Cut the avocados in half, remove the pits, and scoop the flesh into a small bowl. Mash with a fork until smooth. Season with a little salt and lime juice to taste.

Separate the lettuce leaves carefully, wash, and pat them dry.

To assemble the wraps, take a lettuce leaf and spread a spoonful of mashed avocado as the base. Add a generous scoop of the cooked turkey on top.

Serve the lettuce wraps on a plate with a side of tomato-corn salad. Garnish with additional cilantro if desired.
