Add the chopped tomatoes to the pan and cook for an additional 3-4 minutes until they soften and combine with the onions.

Add the mixed vegetables to the pan, stirring well to combine. Cook for about 5-7 minutes until the vegetables are slightly tender.

Add the soaked and drained basmati rice to the pan, gently stirring to mix with the vegetable and spice mixture.

Pour in 2 cups of water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pan with a tight-fitting lid, and let it simmer for 15-20 minutes, or until the rice is cooked and all the water is absorbed.

Once cooked, remove the pan from heat and let it sit, covered, for another 5 minutes to steam.
