By Joan Downen

Total: 30 minutes
BreakfastVeganVegetarianGluten-Free

Ingredients

  • 1.5 cups rolled oats
  • 3 tbsp chia seeds
  • 4 cups unsweetened almond milk
  • 2 whole bananas
  • 2 cups mixed berries
  • 3 tbsp almond butter
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • 1 pinch salt

Instructions

1

In a medium-sized saucepan, combine the rolled oats, chia seeds, and unsweetened almond milk. Stir well to ensure the chia seeds are evenly distributed.

2

Place the saucepan over medium heat and bring the mixture to a low simmer, stirring occasionally. Continue to cook for about 15 minutes or until the oats are tender and the mixture has thickened, stirring frequently to prevent sticking.

3

While the porridge is cooking, slice the bananas and set them aside. If using fresh berries, wash them thoroughly.

4

Once the porridge has thickened to your desired consistency, remove it from the heat. Stir in the cinnamon and a pinch of salt. Taste and add maple syrup if you prefer a sweeter porridge.

5

Divide the porridge into serving bowls. Top with sliced bananas, mixed berries, and a generous spoonful of almond butter for each serving.

6

Serve the porridge warm, and enjoy this hearty and nutritious breakfast!
