Preheat a large non-stick skillet over medium heat and add the turkey breakfast sausage links. Cook the sausages for about 8-10 minutes, turning occasionally until they are browned and cooked through. Remove from the skillet and keep warm.
In a large mixing bowl, combine 3 cups of pancake mix with the amount of water specified on the package (usually around 2 cups). Stir in 1 teaspoon of vanilla extract and mix until smooth. If using a homemade batter, just ensure the batter is a thick consistency, adding water as necessary.
Wipe out the skillet used for the sausages or use a separate non-stick skillet. Add a small amount of butter (about 1 tsp per batch) over medium heat.
Once the butter has melted and the skillet is heated, pour about 1/4 cup of pancake batter for each pancake onto the skillet. Cook pancakes until bubbles form on the surface and the edges look set. Flip and cook for another 2 minutes until golden brown. Repeat with the remaining batter, using butter as necessary.
While pancakes are cooking, in a small saucepan over low heat, warm 1 cup of mixed berries with 1/4 cup of maple syrup, just until syrupy, taking care not to break down the berries completely.
Serve the pancakes hot, topped with a scoop of plain Greek yogurt, the mixed berry syrup, a drizzle of additional maple syrup if desired, and a side of warm turkey sausage.
