  • 1 cup quinoa
  • 15 oz can chickpeas
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • 2 tbsp lemon juice

Instructions

Rinse the quinoa under cold water, then place it in a saucepan with 2 cups of water. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes or until all the water is absorbed and the quinoa is fluffy.

While the quinoa is cooking, drain and rinse the chickpeas to remove any excess salt or preservatives from the can.

In a large bowl, combine the halved cherry tomatoes, diced cucumber, and finely chopped red onion.

Once the quinoa is cooked, fluff it with a fork and let it cool for a few minutes.

Add the cooked quinoa and drained chickpeas to the bowl with tomatoes, cucumber, and onion.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to create the dressing.

Pour the dressing over the salad and toss everything together until well combined.
