  • 170 g Boneless skinless chicken breast
  • 3/4 cup Quinoa, cooked
  • 1/2 cup Chickpeas, cooked
  • 30 g Feta cheese
  • 1 cup Roasted bell pepper, zucchini, red onion
  • 3 tsp Olive oil
  • 1 tbsp Lemon juice
  • 2 tbsp Fresh parsley

Instructions

Preheat your oven to 400°F (200°C).

Drizzle the chicken breast with 1 teaspoon of olive oil and season with salt and pepper.

Bake the chicken in the preheated oven for 20-25 minutes or until fully cooked and juices run clear.

Meanwhile, in a large bowl, combine the cooked quinoa, cooked chickpeas, roasted bell pepper, zucchini, and red onion.

In a small bowl, mix the remaining 2 teaspoons of olive oil with the lemon juice, salt, and pepper to taste.

Once the chicken is cooked, let it rest for 5 minutes, then slice it thinly.

Add the sliced chicken to the quinoa and vegetable mixture.

Pour the olive oil and lemon dressing over the salad and toss to combine.

Crumble the feta cheese over the salad and sprinkle with fresh parsley.
