Ingredients

  • 6 pieces large eggs
  • 1 cup fresh spinach, wilted
  • 1 pieces medium tomato, diced
  • 1/4 cup grated Parmesan
  • 3 slices whole-grain bread
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

Preheat your oven to 350°F (175°C).

In a large mixing bowl, beat the eggs together with the salt and black pepper until well combined.

Heat olive oil in a non-stick, oven-proof skillet over medium heat.

Add the wilted spinach and diced tomato to the skillet and sauté for 3-4 minutes until the tomatoes start to soften.

Pour the beaten eggs into the skillet over the spinach and tomato mixture. Reduce the heat to low and cook undisturbed for 2-3 minutes until the edges begin to set.

Sprinkle the grated Parmesan evenly over the top of the eggs.

Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the frittata is fully set and the cheese is slightly golden.

While the frittata is baking, toast the slices of whole-grain bread until golden brown.

Once the frittata is done, remove it from the oven. Allow it to cool for a minute before slicing into wedges.

Serve the frittata hot with slices of whole-grain toast on the side.
