In a medium-sized skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken breast strips and season with 1 tablespoon of fajita seasoning. Cook for about 6-8 minutes, stirring occasionally, until the chicken is cooked through and has a nice sear on the outside. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced bell peppers and onion. Sauté for 4-5 minutes until they are tender but still vibrant in color. Add salt and pepper to taste. Remove from heat.
In a large bowl, combine the cooked rice and black beans. If preferred, warm the mixture in the microwave or on the stovetop.
Slice half an avocado and set aside. Chop 1 tablespoon of cilantro and cut the lime into wedges.
Assemble your Fajita Bowl by layering the cooked rice and black beans at the bottom. Top with the cooked chicken, sautéed bell peppers and onions, sliced avocado, and chopped cilantro.
Squeeze fresh lime juice over the bowl before serving for an added zest and flavor. Enjoy your meal!
