Ingredients

  • 200 g plain Greek yogurt (2% fat)
  • 75 g mixed berries (strawberries, blueberries, raspberries)
  • 40 g granola (low-sugar)
  • 10 g chia seeds
  • 1 tsp honey
  • 1 tbsp chopped walnuts
  • 2 tbsp water

Instructions

In a small bowl, combine 10g chia seeds with 2 tbsp of water. Stir well and let it sit for about 5 minutes until it forms a gel-like consistency.

Wash and gently pat dry the mixed berries. If strawberries are large, cut them into smaller pieces to match the size of blueberries and raspberries.

In a serving glass or bowl, add half of the Greek yogurt (100g) at the bottom.

Layer half of the mixed berries (37.5g) over the yogurt.

Add half of the granola (20g) evenly on top of the berries.

Drizzle a small amount of honey (1/2 tsp) over the layers to add a hint of sweetness.

Add half of the chia seed mixture over the granola.

Repeat the layers by adding the remaining yogurt (100g), then the other half of the berries (37.5g), followed by the remaining granola (20g) and chia seed mixture.

Top with 1 tbsp of chopped walnuts and the remaining honey (1/2 tsp) as garnish, if desired.

Serve immediately or refrigerate for up to 2 hours to enjoy later. The parfait tastes best when enjoyed chilled.
