Ingredients

  • 6 pieces whole-wheat or corn tortillas
  • 9 oz cooked turkey breast, shredded
  • 1.5 cups black beans, rinsed
  • 1.5 cups shredded cheddar or Monterey Jack cheese
  • 1 tbsp olive oil or butter
  • 2 cups lettuce
  • 1 medium tomato, diced
  • 1 whole lime
  • to taste N/A salt
  • to taste N/A pepper

Instructions

Preheat a large skillet over medium heat and add 1/2 tablespoon of olive oil or butter. Allow it to warm up for about 1 minute.

Place one tortilla in the skillet, and sprinkle a quarter cup of cheese evenly over the tortilla.

Arrange 1.5 oz of shredded turkey breast and half a cup of black beans evenly over the cheese.

Sprinkle another quarter cup of cheese on top and cover it with a second tortilla.

Cook the quesadilla for 2-3 minutes on each side, or until the cheese is melted and the tortillas are golden brown and slightly crispy.

Remove the quesadilla from the skillet and keep warm. Repeat the process with the remaining ingredients to make two more quesadillas.

While cooking the quesadillas, prepare the side salad by combining lettuce and diced tomato in a bowl. Squeeze lime juice over the salad, and season with salt and pepper to taste.

Slice each quesadilla into wedges and serve with the side salad. Enjoy your meal!
