Slice the tomatoes into thin rounds and set aside.
In a small bowl, mix the black pepper and olive oil. Brush this mixture lightly on one side of each slice of low-carb bread.
Spread 1 tablespoon of butter on the other side of each slice of bread.
In a skillet over medium heat, add the remaining 1 tablespoon of butter and melt.
Place two slices of bread, buttered-side down, on the skillet. Layer with slices of cheese, followed by prosciutto, and a layer of tomato slices. Top with the remaining slices of cheese.
Top each sandwich with another slice of bread, oil-brushed side up.
Cook each side for about 3-4 minutes until the bread turns golden brown and the cheese melts. Press down lightly with a spatula to achieve a nice crust.
Once done, remove the grilled cheese from the skillet and let it sit for a minute. Slice them in half and serve warm.
