Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
In a small bowl, mix breadcrumbs, chopped parsley, lemon zest, and 1 tablespoon olive oil until well combined. Season with salt and pepper to taste.
Place cod fillets on the prepared baking sheet. Brush each fillet with olive oil, then press the breadcrumb-herb mixture on top to form a crust.
Spread asparagus on the baking sheet around the cod. Drizzle with the remaining olive oil and season with salt and pepper.
Bake in the preheated oven for about 15-20 minutes, or until the fish is cooked through and the crust is golden brown, and the asparagus is tender.
While the cod and asparagus are baking, reheat the whole wheat couscous if needed, adding a splash of water to make it fluffy.
Once everything is done, plate the cod and asparagus alongside the couscous. Sprinkle with lemon juice before serving.
